Classic Acai Bowl
This is my go to after a long day at the beach or surfing for 4 hours! It’s so refreshing and delicious!
What I love most about making bowls is that you can be creative! Lay your fruit out into a beautiful design! Add any toppings that fancy you and just have fun with it!
This recipe is one that I’ve worked on for some time, trying to get the acai just right! You want it to stay thick, creamy and not turn into a bowl of soup within 5 minutes!
So here’s whats in it!
Toppings
Granola - Nature’s Path Pumpkin Seed + Flax
Fresh strawberries
Fresh blueberries
1 banana
Coconut shreds
Local honey
Bee Pollen
Ingredients
1 frozen acai packet
1 frozen banana
1 cup frozen mixed berries such as blueberries, strawberries and raspberries
3/4 cup of coconut milk
Making the Bowl
Place the bowl you plan on using into the freezer, that way it is nice and chilled when you’re ready to use it.
Prep your toppings before blending anything! Having everything out, sliced and ready to go beforehand will make it easier to top off your bowl so that you can eat it immediately!
Run the acai packet under cold water and break apart with your hands while it is still in the packet. Cut the top open and place the pieces of acai into the blender. Add the mixed berries and frozen banana.
Add the milk and start the blender on a lower setting. It may have difficulties with the minimal amount of liquid, but you want it to be thick and creamy. Using a blender stick or wand, press the fruit down until it starts to combine more easily. Increase the speed slightly for 1 minute until all the ingredients are blended thoroughly.
As the blender is finishing up, grab the bowl out of the freezer and pour 1 cup of granola on the bottom. Add the acai mixture and spread out evenly over the bowl. Make sure to leave enough room for your toppings.
Add 1/2 cup granola to cover the acai mixture followed by fresh banana, strawberries, blueberries, coconut shreds, local honey and bee pollen. Enjoy!
