Pitaya Smoothie Bowl

Dragon fruit, also known as Pitaya is one of my favorite fruits to make smoothie bowls with! If you’ve ever seen dragon fruit as a whole, it’s a very unusual looking fruit! Once you cut it open though it revels this dreamy pink coloring and sweet flavors! You can find whole Pitaya in your local health food store or in the frozen fruit section.

This recipe was whipped up on the fly by yours truly! Feel free to dress it up anyway you’d like or you can follow this recipe.

Here’s whats in it!


Toppings

1/2 cup granola

1 banana

Handful of bluberriers

1 tbs gojji berries

1 tbs coconut shreds

1 tbs local bee pollen

1 tbs local honey

Ingredients

1 cup frozen pitaya (dragonfruit)

1/2 cup mixed frozen fruit (strawberries, blueberries, raspberries)

1 frozen banana

3/4 cup coconut milk

1 scoop collagen peptide


Making the Bowl

  1. Place the bowl you plan on using into the freezer, that way it is nice and chilled when you’re ready to use it.

  2. Prep your toppings before blending anything! Having everything out, sliced and ready to go beforehand will make it easier to top off your bowl so that you can eat it immediately!

  3. Add the pitaya, mixed berries, frozen banana, coconut milk and collagen peptide to a high powered blender.

  4. Start on a higher speed setting, using a blender stick or wand to press the fruit down until all ingredients are blended thoroughly.

  5. As the blender is finishing up, grab the bowl out of the freezer and pour 1 cup of granola on the bottom. Add the smoothie mixture and spread out evenly over the bowl. Make sure to leave enough room for your toppings.

  6. Add sliced bananas, blueberries, gojji berries, coconut shreds, bee pollen and honey. Enjoy!

Coconut - good source of fiber, potassium and magnesium

Collagen peptide - good for healthy skin, hair and nails. Alleviates joint pain

Granola - good source of fiber, protein and ala omega - 3

Gojji berries - high in antioxidant, rich in vitamin C and fiber

Bee pollen - immunity booster and helps reduce allergies if the pollen is sourced locally

Honey - good antioxidant and helps with inflammation
