Big Red Beet Smoothie

Big+Red+Beet+Smoothie

Earthy goodness followed by a sweet finish. Beets are one of my things to juice not only because of how good they are for you, but the beautiful, velvety taste they leave you with! Be careful though, this is one veggie that will stain everything it touches so don’t wear anything nice!

This recipe is from the “Smoothie Project” by Catherine McCord.

Here’s whats in it!

Ingredients

1/2 cup frozen strawberries

1/2 cup frozen raspberries

1/4 small raw beet, peeled and cut into 1” pieces

1 dried date, pitted

1 tablespoon goji berries

1 tablespoon chia seeds

3/4 cup coconut milk

MAKING THE SMOOTHIE

Combine all the ingredients in a high powered blender in the order they are listed above. Start the blender on a lower setting working your way up to a higher speed for 2 minutes. Use a blender stick or wand to help press ingredients down to blend more thoroughly. Pour into a glass and top it off with fresh goji berries and chia seeds. Enjoy!
