Matcha Tea Cheesecake Bars

These have got to be my favorite treat after a long hike! Cool down with this delicious, healthy snack that’s simple to make and fun to eat!

Here’s whats in it!


Matcha Topping

1 1/2 cups cashews (soaked over night and rinsed)

1/2 cup coconut oil

1/2 cup coconut cream

1 tbsp agave necter

2 scoops vanilla protein powder

2 tbsp matcha green tea powder

Creamy Crust

1 cup prunes

1 cup almonds

1/2 cup agave nectar


Making the Bars

  1. Mix the prunes in a food processor until small pieces are formed. Place the mixture into a small bowl and put off to the side.

  2. Blend the almonds next until fine meal forms.

  3. Add the processed prunes and 1/2 cup agave nectar to the processed almonds and blend until all ingredients are combined forming a crumbly loose dough.

  4. Line a 8x8 inch square dish with parchment paper and pack the mixture evenly to the bottom of the dish. Refrigerate while you proceed to the next part of the recipe.

  5. In a high powered blender, combine the rinsed cashews, coconut oil, coconut cream, remaining 1 tbsp agave nectar, vanilla protein powder and matcha green tea powder. Blend until smooth.

  6. Grab the 8x8 inch dish from the fridge and pour the mixture over the crust. Freeze for 4 hours before removing the dish from the freezer. Let it sit on the counter for a few minutes to thaw so it’s easier to cut. Create evenly cut squares to the size you desire. Store them in the freezer with parchment paper squares in between in an air tight container up to 4 weeks. Enjoy!
