Pumpkin Spiced Cookies with Sweet Cream Icing
Everyone likes a little pumpkin in their life! Once Thanksgiving comes around the corner it’s homemade pumpkin pie, pumpkin spiced lattes, and my new favorite - Pumpkin Spiced Cookies with Sweet Cream Icing!
Even though the holiday season has passed, these cookies are still a crowd favorite that I continue to make well into the new year!

Here’s what you’ll need!
Sweet Cream Icing
1/2 cup or 1 stick unsalted butter softened
8oz cream cheese softened
3 cups powdered sugar
1 teaspoon vanilla extract
Pumpkin Cookies
1 cup or 2 sticks unsalted butter softned
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1 egg
1 teaspoon vanilla extract
1 15 oz can pumpkin puree
2 cups all-purpose flour
Making the Cookies
Preheat the oven to 350 F degrees. In a large bowl, combine the butter, sugar, baking soda, baking powder, salt, cinnamon and pumpkin pie spice. Beat well with an electric mixer or silicone spatula.
Add the egg, vanilla extract and pumpkin puree. Continue to mix. Slowly add the flour until all ingredients are combined thoroughly. The consistency should be wet dough.
On a large cookie sheet, lay down a piece of parchment paper. Scoop a tablespoon of the mixture onto the parchment paper at least 2 inches apart from one another.
Note: Should make roughly 24 cookies.
Bake for 10 - 12 minutes. Remove from the oven and allow cookies to cool while you make the sweet cream icing.
Making the Icing
In a medium size bowl, mix together the butter, cream cheese until their are no lumps. Add the powdered sugar and vanilla extract. Stir slowly until all ingredients are combined thoroughly.
Once the cookies are cool, add the sweet cream icing to the cookies. Top them off with a little sprinkle of pumpkin pie spice. Enjoy!
